Tropical SangriaThe 2016 Olympic Games are underway, and I am obsessed! My family and I love sports, and the Olympics are no exception. Every two years, my family is practically glued to the TV watching the summer or winter games. There’s nothing more inspiring than watching the world’s greatest athletes compete. Gymnastics is my favorite sport to watch (both men’s and women’s!), but according to my husband, every sport is my favorite. I love swimming and diving and whitewater kayaking and soccer and volleyball and track… or whatever is on at the moment. Clearly I’m an Olympics junkie! The host city, Rio de Janeiro, was the inspiration for this sangria. Bright, colorful, bubbly, fruity and sweet, tropical sangria is perfect for sipping on warm summer nights, or while cheering on your favorite athletes. This tropical sangria is like summer in glass.

Tropical SangriaLook how much fruit is packed into each glass! Pineapple, mango, kiwi and strawberries are in each and every glass, and the coconut rum adds even more tropical flair. I used my favorite Barefoot Moscato, which is light and sweet, perfect for this sangria. Preparation is simple- chop fruit into chunks, and mix with white wine and rum in a large pitcher. Refrigerate for 4 hours or overnight, and serve!

Top off each glass with club soda for a refreshing summer drink. You can really see and taste the difference club soda makes in this sangria (the photo above was taken before I added the club soda). And don’t forget the fruit! Give each glass a generous scoop of tropical fruit. Isn’t my Loch Ness monster ladle the cutest? Ingredients

  • 1 bottle (750 mL) sweet white wine (I used Moscato)
  • 1 cup coconut rum
  • 1 pineapple, chopped
  • 1 mango, diced
  • 2-3 kiwis, peeled and sliced
  • 1/2 cup sliced strawberries
  • Club soda

Instructions

  1. Cut fruit, saving any excess juice.
  2. Add fruit to a large pitcher.
  3. Mix in wine, coconut rum, and any reserved fruit juice.
  4. Stir, and refrigerate for 3-4, or overnight.
  5. Serve in your favorite wine glasses. Add a scoop of fruit to each glass (a ladle works perfectly!).
  6. Garnish with a slice of fruit, and if desired, add a splash of club soda for a bubbly and refreshing summer drink.

Tropical SangriaNon-Alcoholic Tropical Sangria

No alcohol, no problem! I created a non-alcoholic version so everyone can enjoy this summer treat.

1 pineapple, chopped
1 mango, diced
2-3 kiwis, peeled and sliced
1/2 cup sliced strawberries
2 cups pineapple juice or orange juice
1 liter lemon-lime soda

Mix all ingredients together and serve! Do not let this version sit overnight, lest your sangria go flat.Tropical Sangria
