Last winter, I met up with my best friend and her husband for a double date. After dinner (and about six servings of onion rings), she ordered dessert in the form of a drink called “Chocolate Dream”. The waitress brought an enormous mug of hot chocolate with Bailey’s Irish Cream, coffee liquor, amaretto, and lots of whipped cream. It was delicious, and I don’t think the boys got any of it. It was simply amazing.
When we visited them in Fargo that summer, I tried to recreate the drink in mousse form. I’ve made mousse so many times I don’t even need to look at the recipe any more, and I made a few modifications to incorporate the liquor. The result was a very soupy mess than refused to set and become mousse. We laughed, and drank it as-is, pretending it was a very thick milkshake. Whoops.
After lots of experimenting, I finally fixed the recipe just in time for her 25th birthday. We served this Irish cream chocolate mousse for dessert after a lovely evening of birthday festivities, and it was a huge hit! If you like Bailey’s Irish Cream, you will love this mousse. The Irish Cream isn’t overwhelming, and is balanced perfectly by the rich flavor of chocolate. This mousse is so creamy and smooth, it’s impossible to resist!
