fruitbars - 12txtIt’s hard to believe that it is already the end of August and summer is almost over. We’ve been making these fruit bars all summer, and I’m so excited to share the recipe with you! It’s been a hot summer. We’re lucky enough to have air conditioning in our home, but we spent much of our summer soaking up the sun in the backyard.  Even in the shade, the heat and humidity can be overwhelming. Oh the joys of Minnesota summers!

Cheesecake MousseCan you believe it’s already July? This summer has flown by, and we are trying to make the most of every bit of it! Last week, we celebrated not one, but two weddings with dear friends.  We were so honored to be part of their wedding days, but it made for a very busy week, and the entire month of June was over before we knew it.

Like many Minnesotans, we plan on celebrating the Fourth of July at the lake. My grandparents have a beautiful cabin on a lake just outside the cities, and our families are up at the lake just about every weekend in the summer. We celebrate the Fourth with lawn games, a boat parade, a barbecue and driving into town for fireworks. And of course, Fourth of July isn’t complete without red, white and blue treats! Just because we are at the lake doesn’t mean we are limited to Bomb Pops and watermelon slices. This year, we’ll be enjoying a much more decadent treat- Red, White and Blue Cheesecake Mousse!

I’ve been trying to eat healthier lately, and one of the first things to go was dessert. Unfortunately, my sweet tooth didn’t get the memo. I’ve been craving sweets and looking for some healthy alternatives. Being on any sort of restricting diet is hard for me to begin with (I have almost no self-control when it comes to food), but it’s especially hard when I’m trying to create new recipes for the blog. I hate trying to figure out what I can and cannot eat, instead of being creative and experimenting in the kitchen. To change things up, and satisfy my sweet tooth, I decided to try to recreate one of my favorite desserts, all while following the “rules” to the letter.
Apple Crisp. It’s one of my favorite fall desserts, and the basic components are pretty healthy: apples, oats, spices. What isn’t so healthy is everything else that gets added: butter, sugar, ice cream, caramel. Could apple crisp still be delicious without all those extras?

Irish Cream Chocolate Mousse

Irish Cream Chocolate MousseLast winter, I met up with my best friend and her husband for a double date. After dinner (and about six servings of onion rings), she ordered dessert in the form of a drink called “Chocolate Dream”. The waitress brought an enormous mug of hot chocolate with Bailey’s Irish Cream, coffee liquor, amaretto, and lots of whipped cream. It was delicious, and I don’t think the boys got any of it. It was simply amazing.

When we visited them in Fargo that summer, I tried to recreate the drink in mousse form. I’ve made mousse so many times I don’t even need to look at the recipe any more, and I made a few modifications to incorporate the liquor. The result was a very soupy mess than refused to set and become mousse. We laughed, and drank it as-is, pretending it was a very thick milkshake. Whoops.

After lots of experimenting, I finally fixed the recipe just in time for her 25th birthday. We served this Irish cream chocolate mousse for dessert after a lovely evening of birthday festivities, and it was a huge hit! If you like Bailey’s Irish Cream, you will love this mousse. The Irish Cream isn’t overwhelming, and is balanced perfectly by the rich flavor of chocolate. This mousse is so creamy and smooth, it’s impossible to resist!Irish Cream Chocolate Mousse
