Best of 2016

It’s hard to believe it is already the last day of 2016! What an exciting, full and crazy year it has been for us. I took an un-planned blogging break for the past several weeks to focus on family, work and other responsibilities. The holidays are always a busy time,  and this year I definitely underestimated and stretched myself a little thin! Now we are all well-rested, well-fed, the house is finally clean and back to normal.

New Year’s Eve is a time to reflect on the past year and look forward to the coming year. Our 2016 flew by and as the dates run together, it is easy to forget all the things, big and small, that happened this year and get lost in the chaos of the past few weeks. Luke and I took the time this past week to go through all of the photos we took this past year and reminisce about the past year.  To highlight our favorite moments, we put together a list of our best adventures and recipes from 2016.

2016 was a busy year for us! Last January we shared a list of 16 adventures we wanted to take in 2016. We made an honest effort, but were only able to complete 10 of the 16.

Looking back, my favorite adventures (or events) this year were:

January: Braving the cold to ice skate in subzero temps

Ice Skating in Sub-Zero Temps

February: Watching my team, the Denver Broncos win the Superbowl (and eating tons of these cookies)

March: Road tripping to Dubuque, Iowa for a long weekend “just because”

April: Turning 25

May: Road tripping to Detroit Lakes to spend the weekend with friends

June: Attending the wedding of two of our best friends! They met at our wedding- he was the best man and she was a bridesmaid! Luke and I were thrilled to be part of their intimate backyard wedding and celebrate again at a formal ceremony and reception in October.

July: Moving out of our little apartment and into my grandparents’ house in Minneapolis

Currently July 2016

August: Walking to Minnehaha Falls after work EVERY DAY because we could, and the view never got old.

September: Driving to Kansas City to attend a family wedding, and taking a few extra days to explore.

October: Celebrating our 2nd wedding anniversary on the North Shore

North Shore Tetteguche

November: Hosting Thanksgiving (our first time hosting a big family gathering)

December: Celebrating my brother’s engagement! We adore his fiancée and can’t wait for their wedding this summer.

We spent lots of time in the kitchen this year, especially now that we have a much bigger kitchen. It is so great to be able to cook together without constantly running into one another. We ate so many delicious things this year, but here are some favorites:

Baked Apples (this recipe has been pinned over 11,000 times on Pinterest! Thank YOU for sharing it!)

Tex-Mex Stuffed Peppers

Turkey Meatballs

Gluten-Free Pumpkin Muffins

Thank you for joining us for an exciting and delicious 2016! We can’t wait to see what the next year brings. Have a happy and blessed new year!
